Chilli Con Carne
Ingredients

| 1 tbsp | olive oil |
| 1 | onion, diced |
| 3 | garlic cloves, minced |
| 1 | red bell pepper, diced |
| 500g | ground beef |
| 2 cans (400g) | diced tomatoes |
| 1 can (400g) | kidney beans, drained and rinsed |
| 3 tbsp | tomato paste |
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and diced red bell pepper. Cook for another 2-3 minutes until fragrant.
- Add ground beef to the pot. Cook until browned, breaking it up with a spoon
- Stir in diced tomatoes, kidney beans, and tomato paste. Mix well to combine.
- Season with salt, pepper, and your choice of chili powder or spices.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-30 minutes, stirring occasionally.
- Taste and adjust seasoning as needed. Serve hot with rice or tortilla chips.
- Garnish with chopped cilantro, shredded cheese, and a dollop of sour cream if desired.
