Chilli Con Carne

Ingredients

1 tbspolive oil
1onion, diced
3garlic cloves, minced
1red bell pepper, diced
500gground beef
2 cans (400g)diced tomatoes
1 can (400g)kidney beans, drained and rinsed
3 tbsptomato paste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and diced red bell pepper. Cook for another 2-3 minutes until fragrant.
  3. Add ground beef to the pot. Cook until browned, breaking it up with a spoon
  4. Stir in diced tomatoes, kidney beans, and tomato paste. Mix well to combine.
  5. Season with salt, pepper, and your choice of chili powder or spices.
  6. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-30 minutes, stirring occasionally.
  7. Taste and adjust seasoning as needed. Serve hot with rice or tortilla chips.
  8. Garnish with chopped cilantro, shredded cheese, and a dollop of sour cream if desired.
